Some parental supervision needed
- 2 cups chopped and pitted dates
- 2 cups boiling water
- 2 tsp. baking soda
- 1 cup sugar
- 1 tbsp. melted butter
- 1 egg, beaten
- 2 3/4 cups all purpose flour
- 1 cup finely chopped walnuts
- 1 tsp. vanilla
Chop dates into bite size pieces and place in bowl. Boil 2 cups of water. Sprinkle baking soda over dates and pour boiling water onto dates. Allow to sit covered over night or a minimum of 1 hour.
Preheat oven to 325 degrees F.
Add sugar to date mixture, add melted butter and beaten egg. Stir well. Gradually add flour mixing until smooth. Add vanilla and nuts
Spoon into two 9x5x3" loaf pans. Bake for 1 hour or until done.
