- 1 cup chopped dates
- 1 cup chopped walnuts
- 1/2 cup chopped red maraschino cherries
- 1/4 cup butter
- 1 cup brown sugar
- 1/4 cup maraschino cherry juice
- 1 teaspoon vanilla
- 1 teaspoon almond extract
- 1 cup sweetened desiccated coconut
In a large frying pan melt butter on low heat. Add chopped dates and sugar, stir until mixed. Add walnuts, cherries, juice and extracts. Simmer on low heat until mixture starts to thicken. About 10 minutes.
Once thick, cool completely. When cooled roll mixture into one-inch balls. Roll each ball in cocounut. Place on waxed paper lined cookie sheet or tray.
