A traditional every day cookie
Ingredients
- 1 cup brown sugar - firmly packed
- 1 cup crunchy peanut butter
- 1/4 cup butter - softened
- 1/4 cup shortening
- 1 egg
- 1 cup flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup coarsely crushed frosted corn flakes
- 3 Tbsp sugar
Instructions
Heat
oven to 375F.
Combine brown sugar, peanut butter, margarine and
shortening in a large bowl.
Beat until light and fluffy. Add in egg and beat well.
Add flour, baking soda, baking powder and salt and
mix well. Stir in ceral crumbs. It is ok if dough is
sticky.
Lightly flour hands and roll teaspoonfuls of dough
into 1 1/3 inch balls. Roll balls in sugar. Place 2 inches
apart on ungreased cookie sheet and flatten with a fork,
making a criss-cross pattern on top.
Bake for 7 to 10 minutes until golden brown.
Cool 1 minute before removing from
pan. Makes 3 dozen.
