Recipe........ - Giant Jack-o-Lantern Cake
- 4 cups all-purpose flour
- 1 cup sugar
- 4 tsp pumpkin pie spice
- 3 tsp baking soda
- 1-1/2 tsp baking powder
- 6 large eggs
- 1-1/3 cups oil
- 4 tsp vanilla
- 1 30-ounce can pumpkin pie mix (not solid-pack pumpkin)
- 2 cups chopped walnuts
- 2 16-oz containers cream cheese frosting
- green, yellow and red food coloring
- 1/3 unpeeled banana
- 1 cherry fruit roll
Preheat oven to 325°. Grease and flour 10-inch Bundt pan (make sure you get
all the flutes). In large bowl, stir half of the flour, sugar, spice, baking
soda and baking powder. In small bowl, mix half of the eggs, oil and vanilla.
Stir egg mixture, half the pumpkin pie mix, and half the walnuts into flour
mixture. Spread batter in pan. Bake 50 minutes. Cool in pan 10 minutes;
remove from pan; cool completely. Repeat for second cake. Spoon 1/3 cup
frosting into cup; tint green for stem. In bowl, tint remaining frosting
orange for pumpkin.
Cut 1/2-inch slice off top of each cake to make them flat. Attach the two
cakes, flat sides together, with frosting. Cover top hole of cake with a
foil-covered cardboard circle. Cover circle over with frosting. Frost entire
pumpkin with orange frosting. Place banana on cake for stem; frost with green
frosting. Cut eyes, nose and mouth from fruit roll and attach.

In 1584, the French explorer Jacques Cartier reported from the St. Lawrence region that he
had found "gros melons", which was translated into English as "ponpions," or pumpkins.
Decorating........
Take an tree stump or fairly wide log. Remove all bark and allow to dry. Paint orange when dry. Then paint a pumpkin face on stump or log. Add artificial vines at top for decoration.

Craft........Paper Bag Pumpkins
Stuff brown paper lunch bags with old newspaper scrunched up. Tie top of bag to form a stalk. Paint or color bag orange. Once dry if painted, paint or draw on a Jack-o-Lantern face - there you have it!
