Remove ice cream from freezer, put in refrigerator for 10 minutes until slightly soft.
While ice cream softens place sprinkles on a piece of waxed paper. Remove ice cream, scoop on top of 6 large cookies (or 10 small cookies). Press another cookie on top. Smooth sides with back side of spoon and roll in sprinkles.
Serve immediately or store in individual sandwich bags in freezer until ready to gobble up. They won't last long!
